Coconut Milk Ice Cream
1 can full fat coconut milk
2-3 whole eggs
2-3 additional egg yolks
1 heaping tablespoon Cacao powder
Dash of cinnamon
Dash of vanilla
1 Tablespoon of MCT oil (or virgin coconut oil)
2 Tablespoons Lakanto: Zero Calorie All-Natural Sweetener (Can sub honey, dates, or stevia depending on goals)
Pinch of Sea Salt
1 can coconut cream (optional; adds to creaminess)
1 scoop collagen/protein (optional; whey protein will make it a little more gritty)
1g of vitamin C (optional; I usually break open a vitamin C capsule and put it in)
Blend all ingredients in best blender possible. Ensure smooth consistency before putting into ice cream maker.
NOTE: I haven’t tried but it may work just freezing concoction in freezer.
