Breakfast for Champions: Egg Frittata

Thanks to Hannah for this amazing breakfast from our Version 1 of the EmFit Challenge!

EGG FRITTATA (3 SERVINGS)

Before starting: Preheat Oven to 375F.

Ingredients:

8 EGGS
3 ZUCCHINI
2 SWEET POTATOES 
1 PACK SUGAR FREE BACON
SALT, PEPPER, PAPRIKA, OR ANY OTHER SPICES 

Directions:

1. CHOP 2 MEDIUM SWEET POTATOES AND 3 SMALL ZUCCHINIS INTO SMALL CUBES. 
2. SPRINKLE SWEET POTATOES AND ZUCCHINI WITH PAPRIKA, SALT AND PEPPER ON A 9X13 INCH OVEN SAFE BAKING DISH (CAN USE A CAST IRON TOO) 
3. PLACE BACON OVER SWEET POTATOES AND ZUCCHINI COOK FOR ABOUT 20 MINUTES OR UNTIL BACON IS CRISP
4. WHILE POTATOES AND BACON ARE BAKING WHISK 8 EGGS TOGETHER.  CHOP 3 ZUCCHINIS INTO SMALL CUBES
5. AFTER 20 MINUTES, PULL SWEET POTATOES AND BACON OUT OF OVEN. 
6. TAKE BACON OFF TRAY AND SET ASIDE ON PAPER TOWEL
7. ONCE BACON IS COOL ENOUGH TO HANDLE, CHOP INTO COARSE PIECES. 
8. ADD WHISKED EGGS, ZUCCHINI, CHOPPED BACON (SALT, PEPPER, OR ANY EXTRA SPICES) 
9. COOK AT 375 FOR ANOTHER 20-30 MINUTES UNTIL EGGS ARE FULLY COOKED

I was reading this and when i made it i realized it asks you to put zucchini in with the sweet potato and then later with the eggs, is there a typo or do i just do half of the zucchini with the sweet potatos and half with the eggs. Thanks!

I had that exact question but I did the potato’s first and than cooked the zucs. Hope that helps.
